
I get tired of the same-old crockpot lunches, but by mixing in a few hot sandwiches, the slowcooker gets a little more exciting. Top this filling with chopped onion, cucumber and sour cream/yogurt.
Makes 4 greek pita sandwiches
INGREDIENTS:
* 1 chopped onion
* 1 lb. deboned, deskinned chicken thighs
* 1 t. lemon pepper
* 1/2 t. dried oregano leaves
* 1/2 C plain yogurt or sour cream
PREPARATION:
Combine all ingredients except yogurt in cooker and stir well. Cook covered on low for 6-8 hours. Take out chicken, shred and then stir back into crockpot w/yogurt. Stuff mixture into yummy pitas.

Just bought a slow cooker so this recipe will come in very useful. I have some fresh oregano as well which should add a little more to it.
