I never thought I could get my kids to eat beans and rice (a fav of mine), but last night they did and I thought I’d share the recipe.
- 2 cans organic black beans
- 1 onion
- Beef bouillon or beef broth
- Braggs Nutritional Yeast Flakes
- 3 Squash
- 4 Zucchini
- Whole grain rice
With this one, the kids cut the zucchini and squash, unpeeled, into strips. We sauteed them and a chopped onion in olive oil and sprinkled a bit of Braggs yeast over it. We overcooked them to a mushy mess, but they were so yummy!
I made rice to serve, only seasoning with one bouillon cube. For the beans, I just heated them through, and sprinkled some Braggs yeast on it at the end and stirred well. This one was so easy, was super-healthy, and all the kids ate it. Again, I served it with a slice of buttered homemade bread. Yum!
